Summer Roll Platter
Vietnamese Summer rolls, or Gỏi Cuốn (salad roll), are a fresh and flavourful dish consisting of rice paper wrappers filled with fresh herbs, vegetables, rice noodles, and often shrimp or pork, served with a dipping sauce.
Ingredients:
10 rice paper wrappers
100g (3.5 oz) rice vermicelli noodles
2-3 imitation snow crab legs
1 small cucumber
1 medium carrot
1/2 cup shredded lettuce or mixed greens
2 Eggs
1 Luncheon Meat (Spam)
1 Purple Sweet Potato
1 Purple cabbage
2 Okra
Kimchi
Dipping Sauce:
Fish Sauce
Sugar
Water
Garlic
Chilli
Lime
Mint
Cooking Instructions:
Ingredient Prep
Steam Purple Sweet Potato slices for 30 mins.
Make a thin egg crepe, cut into slices.
Grill Luncheon Meat slices.
Boil soaked vermicelli with purple cabbage for 8 minutes until dyed light blue.
Boil Okra for 5 mins, and chopped them into small star pieces.
Slice carrot, cucumber, and purple cabbage.
Dip rice paper in warm water for 5 seconds until soft.
Sauce Making
Fish Sauce : Sugar : Water = 1 : 1 : 2
Mix with chopped garlic, chilli, lime slice and mint.
Rolling Up
Layer vermicelli, carrot, cucumber, cabbage and egg slices as basic filling.
Fold the sides and roll once tightly.
Add one of the colourful ingredients.
Fold the sides and continue rolling tightly until the end.
Repeat the same steps, replacing with different coloured ingredients to make summer rolls in various colours.
Add toppings to make them look more appetising.
Serve by cutting the rolls in half
