Spicy preserved egg noodles with pork mince is a flavourful Chinese noodle dish that combines the bold taste of preserved eggs (century eggs) with a spicy, numbing sauce made from chili, garlic, and Sichuan pepper oil. The springy noodles are tossed with chopped preserved eggs and minced pork, creating a unique dish that’s rich and slightly spicy.
Ingredients
Plain noodle (The flower petal noodles used in the video)
2 Preserved duck egg
Mince pork 100g
1 Garlic, cubed
1 Fresh chili
Spring onion
Coriander
Soy sauce
Soy sauce paste
Sichuan pepper oil
Sesame oil
Cooking Instructions
TO COOK NOODLES:
Boil noodles in boiling water for 5 mins.
TO COOK SPICY PRESERVED EGG :
Chop garlic, chili, green onion and coriander.
Mash 2 preserved eggs and add the ingredients above.
Add a spoon of soy sauce, soy sauce paste, sesame oil, and Sichuan pepper oil. Mix well.
TO COOK MINCED PORK:
Add a little oil, fry garlic, onion, chili, minced pork.
Add a spoon of soy sauce.
Stir-fry the pork until it is fully cooked.
Spread the minced pork and preserved egg sauce over the noodles, then garnish some chopped spring onions on top — and it's done! Bon Appétit!
